Don Fausto’s

Father and son team Joel and Noah Diaz derive inspiration from Kool Korner, an Atlanta Cuban staple of yesteryear, known for being a center of Cuban cuisine and community. Don Fausto’s Features staple dishes such as Cuban sandwiches, croquetas, and even special plate dishes like Enchilado de Langosta. The name, Don Fausto, comes from the senior Diaz’ grandfather who was a doctor, immigrant, community leader, missionary, seminary professor, and pastor. 

Other unique menu dishes include variants on Cubans including a vegetarian cuban and a “Tampa” cuban. Noteworthy additions are the traditional croquetas and empanadas which will be available in retail formats, a Cuban frita smash burger popular in Miami, and rope vieja, a popular flank steak braised dish. The Diaz’ have also decided to add other island flavors to the menu including a stable of whole chicken wings. Three island sauces include traditional jerk from neighboring Jamaica, spicy mango tamarind, and guava barbecue flavors found in Cuban cooking. Finally, the duo is excited to feature some composed dishes for weekend evenings. The Enchilado de Langosta is a popular creole dish made with 6oz of lobster cooked with peppers, tomatoes, garlic, and onions.   

Don Fausto’s is open daily for lunch and dinner.
